Easy No-Bake Energy Bites

No-bake bites made with oats, nut butter, and honey or maple syrup. They pack easily and keep well, which makes them good for travel days and busy weeks.

Ingredients

  • 1 cup old-fashioned rolled oats
  • ½ cup creamy almond butter or peanut butter
  • ¼ cup honey or maple syrup
  • 1 to 2 tablespoons mini chocolate chips or finely chopped dark chocolate
  • Pinch of sea salt
  • 1 to 2 teaspoons warm water, if needed for texture

Instructions

  1. In a medium mixing bowl, combine the rolled oats, nut butter, honey or maple syrup, chocolate, and sea salt. Stir until evenly combined and the mixture holds together when pressed.
  2. If the mixture feels crumbly, add 1 to 2 teaspoons of warm water and stir again until it is cohesive.
  3. Scoop out about 1 tablespoon of the mixture and roll it into bite-sized balls with your hands.
  4. Place the bites on a plate or tray and refrigerate for 20 to 30 minutes to firm up.
  5. Transfer to an airtight container for storage.

Notes

Store in an airtight container in the refrigerator for up to a week. They also hold at room temperature for several hours, which makes them easy to pack.

They freeze well for up to three months. Let them sit at room temperature 10 to 15 minutes before eating.

This recipe doubles easily for longer trips or family snacking.
