No-Knead Easy Breezy Sourdough Discard Crackers

Sourdough discard crackers cooling on a baking sheet in a farmhouse kitchen

Three ingredients and a jar of discard turn into thin, snappy crackers. Customizable with any spices you love, and phenomenal with homemade hummus.

Ingredients

  • 3/4 cup sourdough discard
  • 2 tablespoons melted butter (cool, not hot)
  • 2 tablespoons of your favorite spices (I love Everything Bagel and a fiery one called Smoulder from Boulder)
  • Flaky salt, for sprinkling

Instructions

  1. Prep. Preheat your oven to 325°F and line a baking sheet with parchment paper.
  2. Mix. Combine the sourdough discard, melted butter, and spices in a bowl. Stir until well mixed.
  3. Spread. Pour the mixture onto your prepared sheet and spread it out thinly. A sprinkle of salt on top adds that perfect savory touch.
  4. Bake. Place in the oven for 10 minutes, then remove to score if desired. Bake for an additional 20 to 40 minutes, watching closely until they reach your preferred level of toastiness.
  5. Enjoy. Let them cool, then break into pieces.

Notes

Spread thin. Thick spots stay chewy no matter how long you bake them. Score them for uniform pieces or break them willy-nilly for that rustic charm.
