Maple Mustard Pork Tenderloin

Ingredients

1 pork tenderloin (about 1 to 1 ½ pounds)
2 tablespoons olive oil
2 tablespoons Dijon mustard
2 tablespoons pure maple syrup
1 tablespoon apple cider vinegar
2 garlic cloves, minced
1 teaspoon thyme
1 teaspoon salt
½ teaspoon black pepper

Instructions

  • Preheat oven to 400°F. Whisk together mustard, maple syrup, vinegar, garlic, thyme, salt, and pepper.
  • Pat the pork dry and brush with olive oil.
  • Sear in an oven-safe skillet over medium heat for 2 to 3 minutes on each side until golden.
  • Pour the maple mustard mixture over the top and transfer the skillet to the oven. Roast for 20 to 30 minutes or until the internal temperature reaches 145°F.
  • Let it rest for 5 minutes before slicing.

Notes

  • Serve it with roasted sweet potatoes, Brussels sprouts, or a crisp apple slaw. The sauce from the pan is delicious spooned over the top.
