2 tablespoons olive oil
2 tablespoons Dijon mustard
2 tablespoons pure maple syrup
1 tablespoon apple cider vinegar
2 garlic cloves, minced
1 teaspoon thyme
1 teaspoon salt
½ teaspoon black pepper
Instructions
- Preheat oven to 400°F. Whisk together mustard, maple syrup, vinegar, garlic, thyme, salt, and pepper.
- Pat the pork dry and brush with olive oil.
- Sear in an oven-safe skillet over medium heat for 2 to 3 minutes on each side until golden.
- Pour the maple mustard mixture over the top and transfer the skillet to the oven. Roast for 20 to 30 minutes or until the internal temperature reaches 145°F.
