We all have cherry tomatoes coming out of our ears, right?! 🍅 Whether you’re picking them by the bucket from your garden or snagging them from the farmer’s market, this time of year, it feels like cherry tomatoes are EVERYWHERE. So what do you do with them? Well, here’s my go-to: Roasted Cherry Tomatoes!
Roasting them brings out a sweet, concentrated flavor that’s perfect for throwing in pasta, salads, or even just snacking on. Plus, you can freeze them for later, so you’ll be able to enjoy that summer tomato goodness long after the season ends.
Roasted Cherry Tomatoes Recipe
Ingredients:
– 2-3 cups cherry tomatoes (or however many you have)
– 2 tbsp olive oil
– 1 tsp Redmond salt (or your preferred salt)
– Optional: minced garlic, fresh herbs like thyme, rosemary, or oregano, and freshly ground pepper
Instructions:
Step 1: Preheat Your Oven
Preheat your oven to 400°F (200°C). You want it hot enough to get those tomatoes caramelized and soft, but not so hot that they burn.
Step 2: Prep the Tomatoes
Give your cherry tomatoes a good rinse and dry them off. You can either leave them whole or cut them in half if you want more caramelization. (I usually leave mine whole because, let’s be honest, it’s quicker!)
Step 3: Season Them Up Â
Place your tomatoes on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with Redmond salt. You can get creative here and add in some garlic, herbs like basil, thyme or rosemary, or a dash of pepper. Toss them all together so the tomatoes are well coated.
Step 4: Roast
Pop the baking sheet into the oven and roast for 20-30 minutes, depending on the size of your tomatoes. You’ll know they’re done when they’re soft, wrinkly, and the edges are starting to brown a bit. If they’re really small, check them closer to the 20-minute mark.
Step 5: Cool and Store Â
Once they’re roasted, let them cool completely. Then, store them in an airtight container in the fridge for 4-5 days. Or, if you want to save them for later, lay them out on a baking sheet and freeze them until solid. Once frozen, toss them in a freezer-safe bag or container, and they’ll be good for up to 6 months.

- Toss them into your favorite pasta dish for a burst of sweet, roasted flavor.
- Add them to a salad for extra texture and taste.
- Blend them into a quick tomato sauce.
