Farm-Fresh Homemade Tomato Salsa Recipe: A Step-by-Step Guide

Hi friends! We picked a heap of tomatoes ripe and ready this week so I figured, why not whip up some spicy homemade salsa and share the love with y’all? And hey, if you’re lookin’ to can it, I gotcha covered. If not, just eat it up or share with your neighbors!

Tomato Bounty Salsa Ingredients

So, you ready to make some salsa? Grab these:

🍅 9 cups of my ripe, peeled, and chopped homegrown tomatoes. Ain’t nothin’ like the real thing!

🫑 2 1/2 cups chopped green bell peppers (fresh from the patch)

🧅 2 1/2 cups** chopped white onion

🌶️ 4 medium jalapeños, diced (depends on how fiery ya feel)

🧄 8 big ol’ garlic cloves, all chopped up

🧂 6 teaspoons canning salt (it’s the real deal)

🍶1 cup white vinegar

🥫1 can (12-ounce) tomato paste (yeah, I sometimes cheat a lil)

Before diving in, prep your ingredients. Peeling the tomato skins might be a wee bit tricky, but trust me, it’s worth it.

Herbs? Add ’em when you’re diggin’ into the jar later on.  Fresh herbs like cilantro go a bit wild color-wise when canned. If ya like, sprinkle in some dried herbs too.

Whipping Up the Salsa Fiesta

1. Cook ’em up! Toss everything into a big ol’ pot and let it simmer for about 30 minutes till it gets all nice and thick. Sneak a taste with some chips. It’s mighty good, I promise!

2. Jar Time! Pour that deliciousness into clean jars. Use a funnel if ya got one, makes it neater. Don’t forget to wipe the jar rims before sealing them up.

3. Water Bath: Dip those filled jars into a hot water bath. Let ’em bubble away for 30 minutes, making sure they’re all soaked up.

4. Cool Down: Carefully fish out the jars and let ’em cool down. Those tongs grandma gave me sure come in handy here!

Some More Prep Notes 

Peelin’ them Tomatoes

Got to peel those beauties. Make a lil’ “X” at the bottom of each one, dunk ’em in boiling water for a minute, and then toss ’em in icy water. The skin will slip off smoother than a new tractor!

Clean Jars = Happy Salsa

Give your jars a good wash to get rid of any of that pesky dust or bacteria. My ol’ dishwasher does the trick. If you keep ’em warm, it’s even better when pourin’ in that salsa.
