- 1 ½ cups diced fresh pineapple
- 1 red bell pepper
- diced ½ small red onion
- finely chopped ¼ cup fresh cilantro
- chopped Juice of 2 limes
- 2 Tbsp olive oil Salt and pepper, to taste
Instructions
In a large bowl, combine black beans, pineapple, red bell pepper, onion, and cilantro. In a small jar, whisk together lime juice, olive oil, salt, and pepper. Pour the dressing over the salad, toss gently, and chill for at least 30 minutes to allow the flavors to meld.
