Ingredients
1/2 cup unsalted butter, softened
1/2 cup dark brown sugar, packet
1 large egg
1 cup molasses (or see DIY alternative below)
1 tablespoon freshly grated ginger
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
1/4 teaspoon salt
1 cup ginger beer (room temperature)
Optional: Powdered sugar or whipped cream for topping
DIY Molasses Substitute (if needed):
• 1 cup dark brown sugar
• 1 tablespoon apple cider vinegar or water
Mix thoroughly until smooth. This substitute will provide similar richness and tang to molasses.
Instructions
1. Preheat Your Oven:
Place your cast iron skillet in the oven and preheat to 350°F (175°C). Preheating the skillet ensures beautifully caramelized edges
2. Prepare the Batter:

• Add the egg, molasses (or DIY substitute), and freshly grated ginger. Mix until smooth.
3. Mix Dry Ingredients:
• In a separate bowl, whisk together the flour, baking soda, cinnamon, cloves, nutmeg, and salt.
4. Combine Wet and Dry Ingredients:
• Add the dry ingredients to the wet mixture in three parts, alternating with the ginger beer. Start and end with the dry ingredients, mixing just until combined.
5. Prepare the Skillet: Carefully remove the preheated skillet from the oven. Grease it generously with butter or cooking spray.
6. Bake the Cake:
• Pour the batter into the hot skillet, smoothing the top with a spatula.
• Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
7. Cool and Serve:
• Let the cake cool in the skillet for about 10 minutes before slicing.
• Dust with powdered sugar or serve with whipped cream.
