Ingredients
- 1 pound mixed hot peppers (heirloom if you have them, any variety works)
- ½ onion, chopped
- 4–5 garlic cloves, peeled
- 2 cups apple cider vinegar with the mother
- 2 tablespoons honey
- 1 tablespoon Redmond salt
- Splash of olive oil for sautéing
Instructions
1. Remove stems from the peppers.
2. Roughly chop them, keeping the seeds if you want more heat.
3. In a large pan, sauté the peppers, onion, and garlic in a splash of olive oil until softened and fragrant.
4. Add apple cider vinegar, honey, and Redmond salt. Stir and bring to a gentle simmer.
5. Cook for 15–20 minutes until the peppers are very soft.
6. Cool slightly, then transfer to a blender.
7. Blend until smooth. For a thinner sauce, strain through a fine sieve. For a thicker sauce, leave as is.
8. Pour into clean glass bottles or jars, seal, and refrigerate.
